Meet Chef Robin Mayeul-Enguerrand

In charge of the kitchens, Mayeul-Enguerrand Robin develops his own unique culinary vision, drawing inspiration from his memories, travels and encounters. From Corsica to Brazil, via Italy, the traces of his journey are subtly reflected in certain combinations of ingredients, though always with a touch of restraint.

Part of a new generation of chefs, he champions a cuisine that is exacting yet open-minded, precise without being rigid, and sensitive without being ostentatious.

Originally from Lyon, chef Mayeul-Enguerrand Robin began his professional career in 2009, driven by a simple passion – the love of good food, instilled in him by home cooking. He began his career in Paris at a Michelin-starred restaurant, before going on to work at renowned establishments such as Le Vieux Logis in Trémolat, Dordogne, and Château Cordeillan-Bages in Pauillac.

Meet the head waiter and sommelier, Antonu Andreani

Originally from Porto-Vecchio, Antonu Andreani joined the Domaine de Dolomieu in 2026 as head waiter and sommelier.

He began his career at a very young age in the restaurant industry before specialising in sommellerie wine service, and later working in renowned establishments both in Corsica and abroad.

Deeply committed to passing on his knowledge, he has developed an approach that is both demanding and supportive, in which every member of the team finds their place and progresses. In the dining room, he ensures a balance between precise service and unpretentious dining, working closely with the kitchen staff. His aim is to make every meal a harmonious experience, true to the spirit of the estate.

The wine cellar and cheeses, where heritage meets character

Housed in the château’s former chapel, the Domaine de Dolomieu's wine cellar takes visitors on a journey through the vineyards of France and beyond. It showcases France’s major wine growing regions, such as Burgundy, the Rhône Valley, the Loire and Languedoc, while also giving pride of place to lesser-known wine-growers who are guided by a sincere respect for terroir.

A few Italian, Spanish and Corsican selections round off this collection. The menu emphasizes balance, precision and discovery. It perfectly complements the chef’s cuisine, seeking harmonious combinations of textures, flavours and origins to enhance every dining experience.

At the entrance to the restaurant, a cheese cellar designed in the spirit of a cabinet of curiosities celebrates the venue’s regional identity.

It brings together a selection of mature cheeses, sourced in particular from the neighbouring mountain ranges and France’s major cheese-producing regions.

A table open to all

Dedicated to hospitality and fine dining, La Table de Déodat welcomes guests staying in one of the estate’s accommodation options, as well as local residents, and is the perfect venue for celebrations and corporate events. This serene historic setting is the perfect venue for weddings, special dinners and private hire events.
